Paul Callaghan came late to the discovery that real food can be produced with very little effort.

After losing his job to the recession, Paul moved to Co. Clare where he started growing his own food on a small plot of land. It was here where he discovered his passion for cooking.

He is now making up for lost time with his cookbook Calso Cooks: Real Food Made Easy and his blog Calso Cooks from the Sustainable Larder.

The cookbook includes delicious recipes like My Dad’s Homemade Soup, which shows off his love of hearty, rustic cooking, his courgette carbonara highlights his love of using foods in season and his Vietnamese chicken salad shows off his desire to taste foods from all over the world.

Calso Cooks promotes healthy eating and the easy to follow recipes will appeal to everyone, from the hearty cook to the novice chef - his pictures will make your mouth water at the very sight of them.

Paul understands that real food can be produced with very little effort and can be tastier and healthier than the conveniences foods he had survived on previously.
