Apple and turkey burgers

500g minced turkey

2 large clove garlic, crushed

1 large onion, finely chopped

2 apples, grated or finely chopped

3 tbsp parsley, chopped

1 tbsp ground cinnamon (optional)

1 tbsp olive oil

4 ciabatta rolls, halved horizontally

100g haloumi cheese, sliced horizontally into 4

freshly ground salt and black pepper

salad leaves, to serve

For the salsa:

1 tbsp olive oil

1 onion, finely chopped

400g canned chopped tomatoes

2 tomatoes, chopped

1-2 green chilli, deseeded and finely sliced

1 tsp sugar

black pepper

Making the salsa: Drizzle the oil into a saucepan and heat over medium heat. Pour in the onions and fry until soft (about 5 minutes).

Add the rest of the salsa ingredients and stir. Cover with a lid then bring to the boil. Lower the heat and let it simmer for another 10 minutes.

Leave it to cool down. Chill in the refrigerator.

Heat the grill.

In a bowl, thoroughly combine the turkey, garlic, onion, apples and parsley. Sprinkle with the cinnamon (optional), salt and black pepper and drizzle with the olive oil. Mix well. Divide into 4 parts and shape each part into a patty.

Toast the ciabatta rolls lightly. Keep them warm.

Lay the patties on the rack of the grill pan and grill for about 5 to 6 minutes on each side. The burger should be thoroughly cooked.

Top each burger with a slice of haloumi cheese and grill for another 1-2 minutes, until melted.

Place the burgers between the warm rolls and top them with a large serving of salsa and a handful of salad leaves.
