Banana snack cake
Healthy banana cake which is great for kids to snack on when served with yoghurt and berries.

160g rolled oats

3 ripe bananas, mashed

40g desiccated coconut

1 tsp baking powder

1 tsp cinnamon

Pinch of salt

3 eggs, beaten

3 tbsp almond butter

1 tbsp maple syrup

1 tsp vanilla extract

Preheat oven to 180°C/350°F/Gas 4.

Grease a 20cm square cake tin and line with baking paper.

Pulse the rolled oats in a food processor until it is the consistency of a coarse flour.

Add bananas, desiccated coconut, baking powder, cinnamon, salt, beaten eggs, almond butter, maple syrup and vanilla extract and mix thoroughly.

Transfer mix to prepared cake tin.

Bake for about 25 minutes.

Remove from the oven and leave to cool.

Slice into small squares and serve with yoghurt and berries.
