Beef meatballs with wilted kale and vegetables
Tasty family dinner, with iron rich lean minced beef and the goodness of kale

Meatballs

500g minced beef

125g breadcrumbs

100g grated Parmesan cheese

2 garlic cloves, minced

½ small onion, finely diced

2 tbsp marinara sauce

1 tbsp fresh rosemary, chopped

1 tbsp fresh parsley, chopped

1 tbsp fresh basil, chopped

½ tsp salt

¼ tsp fresh cracked black pepper

1 egg, lightly beaten

Kale

1 garlic clove, minced

1 head of kale, washed and stalks removed

1 yellow pepper, thinky sliced

1 carrot, cut into thin strips

Salt and balck pepper

Preheat oven to 180°c.

Prepare a baking tray with parchment paper.

In a large mixing bowl, combine all ingredients.

Portion into golf ball shapes and place on a baking tray.

Bake for about 20 mins, until cooked through.

While the meatballs are baking, heat some olive oil in a large frying pan.

Add kale, thinly sliced carrot, yellow pepper and garlic.

Season and continue cooking over a medium heat until kale has wilted.

Serve kale warm with the meatballs.
