Breadcrumb fritters
These fritters are unusual and delicious using ingredients that blend well and are easy to come by.
 

3 eggs
3 tbsp bread crumbs, made from white bread
Olive oil for frying
Powdered cinnamon

For the honey syrup:

1 tbsp icing sugar
6 tbsp honey
4-6 tbsp water

Preheat the oven to 140°C / 275°F / Gas mark 1.

In a food processor, blitz 1 slice of pan to make the breadcrumbs.

Beat the eggs in a large bowl with the bread crumbs.

Heat the olive oil in a heavy-bottomed frying pan and when it is hot add dessert spoonfuls of the egg and breadcrumb mixture, frying them on both sides like mini pancakes. 

Place on kitchen paper. In a pan, combine the icing sugar, honey and water to a simmer then add the fritters a few at a time.

Cook them through for 5 minutes then remove them to a large, baking dish.

Pour over the honey syrup and sprinkle with the cinnamon.

Bake for 10 minutes then serve cooled.
