Breakfast baked eggs
This easy dish is perfect for a family brunch.

4 medium cooked potatoes, cooled

4 medium eggs

½ onions, finely chopped

130g chorizo, thinly sliced

75g shredded cheddar

A few sprigs of chives

Salt and pepper

Olive oil

Sour cream

Preheat oven to 180°C/350°F/Gas 4. In a large pan, add a tablespoon of olive oil and cook the onions until translucent. Add the chorizo and cook for 2 minutes.

Slice a layer off the top of each potato and scoop out most of the inside.

Stuff each potato with the chorizo mix, cheese and crack one egg inside. Season with salt and pepper. Top with more cheese and place on a lined baking sheet. Cook for about 15 to 20 minutes. Scatter with chopped chives and serve with baby spinach and a dollop of sour cream.
