Cauliflower and Cheese Bites
Do your little ones love cauliflower and cheese? Then they will adore our Cheesy Cauliflower Bites! Perfect for snacking on-the-go, and a great addition to dinner or even as a finger food, these little bites are great for all occasions.
 

1 small head of cauliflower
1 cup of grated cheddar cheese
1 egg
1 tbsp oregano
2 tbsp olive oil

Separate the cauliflower into florets and boil for 5-6 minutes until tender.

Refresh the cauliflower under cold water and strain fully.

Place the cauliflower in your food processor and gently pulse until it is broken up and looks rice like.

In a large bowl, combine the cauliflower, cheese, oregano and egg.

Line a baking tray with some parchment.

Using your hands, shape the cauliflower into patties.

Spread the olive oil over the parchment, place the patties on the tray and bake for 10 minutes, flip over and bake for a further 10-15 minutes. Once the bites are golden brown remove from the oven and allow to cool slightly before serving.
