Chicken stir fry
Simple recipe that is a healthier alternative to getting a take away

400g noodles

1 tsp olive oil

1 onion finely chopped

2 cloves of garlic finely chopped

2 tsp ginger finely chopped

3 chicken fillets diced

1 red pepper, cut in strips

1 head of broccoli

Handfull of mushrooms

1 tbs dark soy sauce

2 tbs light soy sauce

1 tsp cornflour mixed with a small drop of water

Cook the noodles in a saucepan of boiling water for 10 – 15 minutes

Heat some olive oil in a wok

Sauté the onions, garlic and ginger for 1 – 2 minutes

Stir fry the chicken for 10 minutes

Add the peppers, brocolli and mushrooms to the wok and cook for 5 minutes

Pour in the dark, light soy sauce and corn flour mixture

Finally  add the noodles to the wok and stir for another minute
