Cornflake and coconut cookies
These tasty cookies make for a handy treat for kids.

110g butter

110g brown sugar

100g caster sugar

1 egg

1 tsp vanilla extract

125g plain flour

30g crushed Corn Flakes

125g plain flour

80g rolled oats

1 tsp bicarbonate of soda

½ tsp salt

½ tsp baking powder

100g desiccated coconut

Preheat oven to 180°C/350°F/Gas 4.

Cream together butter, brown sugar and caster sugar until smooth.

Beat in the egg and vanilla.

Sift the flour, bicarbonate of soda, salt and baking powder and fold together.

Add the oats, crushed Corn Flakes and coconut, mix well.

Cover a baking tray with a sheet of baking parchment.

Using a teaspoon, drop heaped spoons of the mix onto the tray and bake for about 10 minutes or until golden.

Remove from the oven and leave to cool on a wire rack, repeat with this process with the rest of the dough.
