Devil's cake

60g cocoa powder

265g boiling water

260g plain flour

340g caster sugar

1 tsp bicarbonate soda

250g softened butter

3 eggs (beat lightly)

1 tbsp vanilla essence

100g icing sugar

1-2 tbsp water

Red food colouring

Pre-heat oven to 190⁰C.

Dissolve cocoa in boiling water, allow to cool slightly and add one quarter of it to the eggs

In a separate bowl, mix the flour, sugar and bread soda together. Beat in the softened butter and then mix in the remainder of the cocoa and water mix

Gradually add the egg/cocoa mixture, mixing thoroughly between additions. Allow mixture to cool

Pour mixture into a baking tin lined with parchment/baking paper. Bake for 35-45 minutes.

While the cake cools, make your icing. Mix the icing sugar with 1 tbsp of water. Use more water if needed. Add in a few drops of red food colouring until it reaches the desired colour.

Spread over your cake once it has cooled completely.
