Gluten-free peanut butter cookies

Delicious gluten-free cookies made using only 4 ingredients.
260g crunchy peanut butter
220g brown sugar
1 egg, beaten
1 tsp ground cinnamon
Line a baking tray with a baking sheet.
Preheat oven to 180°C/350°F/Gas 4.
Mix peanut butter, brown sugar, egg and ground cinnamon together in a bowl.
Spoon tablespoon sized balls onto prepared baking trays.
Slightly flatten the top with a fork.
Bake for 8 minutes.
Remove from the oven, allow to cool, then serve.
