Herb crusted lamb
If you thought cooking lamb was tricky, this recipe will show you otherwise.

1 leg of lamb (about 3kg)

1 garlic clove

A handful fresh parsley

A handful fresh rosemary

A handful fresh mint

50g pine nuts

50g parmesan, grated

Olive oil

Salt and pepper

Heat the oven to 180°C/350°F/Gas 4. Put the herbs, pine nuts, garlic, parmesan, cheese, salt and pepper in a food processor and pulse.

Put the leg of lamb on a large baking dish. Generously brush with olive oil, then evenly spread the herb mixture. 

Cook the lamb 25 minutes per 500g and an additional 30 minutes. For a 3kg leg, cook it for 3 hours.  

Serve with roasted potatoes and blanched asparagus.
