Mini me pizza pies
Food in small portions appeal to small tummies and these little pizzas are a triumph.
 

1 shortcrust pastry

2 eggs

150 ml milk

50g cheddar cheese, grated

1 tsp mixed herbs

Preheat the oven to 180°C / 350°F / Gas mark 4.

Grease a muffin tray or bun tin lightly with olive oil.

Roll the pastry out until quite thin over a lightly floured surface.

Cut out 10 cm circles for lining a muffin tin or use a cookie cutter for a bun tin.

Line the tray with the pastry circles at the bottoms and re-roll any remaining pastry to make more circles if needed.

Beat the eggs and milk together, add the herbs and pepper.

Sprinkle a little grated cheese in the bottom of each pastry case, then fill with the egg mixture until it nearly reaches the top.

Bake for 15-25 minutes until lightly browned.

These can be served hot or cold and make excellent lunchbox additions.
