Orange shortbread

Lovely shortbread biscuits with added zesty orange and vanilla.
240g butter
200g caster sugar
400g plain flour
1 tsp vanilla extract
1 orange, zested
Preheat oven to 180°C/350°F/Gas 4.
Grease and line a 20cm square cake tin.
Sift flour into a bowl.
Stir in sugar and rub in butter.
Add vanilla and orange zest.
Bring together to form a dough.
Press into the prepared tin and flatten out.
Punch some holes along the top with a fork.
Bake for about 15 minutes until just golden.
Cut into fingers.
