Pancakes with rashers and maple syrup
Pancakes with maple syrup and bacon is an American classic and is the perfect food for a leisurely brunch. 

150 g self-raising flour

2 tbsp caster sugar

1 egg, lightly beaten

150ml milk

25g butter

10 rashers

Maple syrup

Sift the flour into a mixing bowl, add the sugar and then make a well in the middle. Whisk the egg and milk until well combined and then stir in the flour.

Heat a heavy-based frying pan and turn the heat down to a medium heat. Add 25g of butter to the pan and allow to melt. Add ladlefuls of batter to the pan and cook for about 2 minutes on each side, until bubbles appear. Turn the pancakes over.

Repeat with the rest of the batter and serve with rashers and drizzle generously with maple syrup.
