Pink Lady apple pie
This delicious pie made with sweet Pink Lady apples is the perfect dessert.
 

1 pkt Belbake ready rolled puff pastry

4 Pink Lady apples

2 tbsp Belbake light brown sugar

A little Dairy Manor butter

1 Connell Farm egg, beaten with a splash of Coolree Creamery milk

Belbake Icing sugar, to dust

Preheat the oven to 180°C. Keep the pastry in the fridge while you work. Peel, quarter, core and thinly slice the apples, and mix in a bowl with one tablespoon of the sugar.

Grease a baking tray lightly with the butter. Lay the pastry out on your work surface with the wider side of the rectangle facing you. Brush the pastry with the egg wash and scatter the apple slices evenly over it, leaving a little space around the edges.

Now roll the pastry into a long sausage shape away from you as tightly as you can. Pinch the edges together and place the parcel carefully onto the tray. Brush with more egg wash, sprinkle over the remaining sugar and bake for 20 minutes or until golden and crispy. Dust with a little icing sugar and then serve sliced with softly whipped cream, custard or ice cream.
