Raisin loaf cake

Raisin loaf cake
This cake is a sweet alternative to serving bread at lunch. 
 

115g butter, plus extra for greasing

200g self raising flour

110g caster sugar

450ml water

110g raisins

1 tsp baking powder

1 tsp nutmeg

Preheat the oven to 180°C / 350°F / Gas mark 4. Lightly grease a 9 x 10 loaf tin with a little butter.  

Combine the butter with the caster sugar and mix until creamy.

Combine the flour and water together in a saucepan and bring to the boil. Remove from heat and add the butter and caster sugar mix.

Allow to cool before adding the raisins baking powder and nutmeg.

Spoon into the prepared tin and place in the oven for 40 minutes.

Allow to cool in the loaf tin slightly before transferring to a wire rack.
