Simple quinoa salad
Quick and easy quinoa salad.

300ml water

150g quinoa, rinsed

1 red pepper, chopped

1 small red onion, chopped

1 tsp cumin

1 tsp ground coriander

Juice of 1 lime

100g fresh coriander, chopped

100g flaked almonds, toasted

1 tblsp olive oil

Salt and black pepper

Bring water to the boil over a high heat, add quinoa, cover and simmer for around 15 mins over a low heat until water has been absorbed. Transfer to a mixing bowl and chill. Once cool, add in red pepper, onion, cumin, ground coriander, lime juice and fresh coriander and mix. Scatter through flaked almonds, drizzle olive oil and season with salt and pepper. Serve chilled.
