Skinny blueberry pancakes
These delicious blueberry pancakes have only 372 calories per serving.

150g plain flour

1 tsp baking powder

150ml skimmed milk

1 egg, beaten

½ tsp vanilla extract

75g blueberries, plus extra to serve

Oil spray

2 tbsp 0% fat Greek yogurt

1 tbsp maple syrup

Add the flour and baking powder to a bowl.

Combine the milk, egg and vanilla and whisk to form a batter.

Gently fold in the blueberries.

Heat a non-stick frying pan and add a spray of oil.

Ladle in spoonfuls of the batter and cook until bubbles appear on the surface.

Flip the pancakes and cook for 2-3 further minutes until golden.

Serve with yoghurt, a drizzle of maple syrup and a sprinkling of extra blueberries.
