Tandoori chicken with roast broccoli and rice

This tandoori chicken is full of flavour and makes a great and quick dinner.
500g rice
235g plain natural yogurt
2 tsp lemon juice
1 tbsp fresh ginger, finely chopped
1 clove garlic, minced
2 tsp garam masala
3 chicken fillets, cut into chunks
Half head broccoli, cut into florets
Handful fresh coriander
Preheat the oven to 220°C or gas mark 7. Line a baking tray with parchment paper.
Cook the rice according to the instructions on the packet.
In a medium bowl, combine the yogurt, lemon juice, ginger, garlic and garam masala together to make a sauce.
Toss in the chicken and make sure it is fully coated with the sauce.
Place in the fridge for a minimum of an hour.
Place the chicken and the broccoli on the baking tray and place in the oven for 30 minutes, or until cooked through.
Serve on top of the rice and garnish with the coriander.
