innocent understands the importance of getting fruit & veg into your little ones, but also understands that it’s not always easy too. For some ideas of how to get more fruit & veg into January lunchboxes, try these one simple muffin recipes with five delicious varities.

120g plain flour

120g wholemeal flour

2 tbsp milled flaxseed

2 tsp baking powder

1 tsp bread soda

65g date sugar

250g apple puree

2 tbsp sunflower oil

80ml mik

1 tsp cinnamon

Berry

125g raspberries

125g chopped strawberries

Blueberry and lemon

Zest of 1 lemon

150g blueberries

Banana, dark chocolate and chopped walnuts

1 mashed banana

100g dark chocolate chips

100g chopped walnuts

Carrot, courgette and raisin

100g grated carrot

100g grated courgette

100g raisins

Pear and apple

1 pear, peeled and chopped

1 apple, peeled and chopped

Preheat oven to 180°C/350°F/Gas 4.
To make the muffin base add the plain flour, wholemeal flour, milled flaxseed, baking powder, bread soda, date sugar, apple puree, sunflower oil, milk and cinnamon to a large mixing bowl and mix well.
Now choose which variety to make, add the extra ingredients required and stir together.
Spoon the batter into a 12-hole muffin tray lined with paper cases.
Bake in the preheated oven for about 20 minutes.
