Midweek Meals: 5 veggie-friendly pasta dishes the whole family will love

If you're trying to think of some new veggie-friendly recipes to sink your teeth into this meat-free Monday, then you've come to the right place!

These five pasta dishes are some of our go-to vegetarian options which we find ourselves turning to time and time again. Back when dinner parties were a thing, I loved to invite a few friends over at the end of a long week for a bottle of wine (or three) and some good, homemade grub.

To save myself having to cook two meals, one for the vegetarians and one for the meat-eaters, I'd simply throw one of these sumptuous pasta dishes together, knowing with absolute certainty that everyone would love it. They're called crowd-pleasers for a reason after all.

So, here's a list of five veggie-friendly pasta dishes which would be perfect for any vegetarian dinner party guests, or simply for your weekly meat-free Mondays.

Linguine with lemon, garlic and thyme mushrooms

While this dish certainly scrimps on time spent in the kitchen, it doesn't scrimp of flavour.

Tagliatelle with vegetable ragu

This wholesome and hearty dish is actually deceptively healthy too.

Courgette gnocchi with mascarpone cheese and spring onions

This creamy recipe is super quick to make, only taking 20 minutes from start to finish, making it the perfect midweek meal.

Lentil and vegetable lasagne

We love this vegetarian twist on the classic Italian dish.

Spinach-mushroom mac’n’cheese

The ultimate comfort food made heathy with addition of delicious veggies.
