Lemon Curd Eton Mess

A yummy take on an old favourite
400ml double cream
1 tbsp icing sugar
½ jar of Chivers Lemon Curd
4 medium meringue nests, smashed
8 regular marshmallows, chopped
2 chunky buttery shortbread biscuits, crushed
Raspberries to serve, optional
Place lemon curd into a bowl and give it a little beating with a spoon to soften it up.
Beat double cream and icing sugar in a large bowl or jug with icing sugar until it just holds a figure of eight.
You can serve these up in glasses or in bowls. Either way, layer up cream, meringue, biscuit, marshmallows and lemon curd. Repeat once more and serve! A little extra lemon curd on the side and some fresh raspberries for a pop of freshness are optional, but recommended additions!
