Mini quiches
These little quiches are a boredom buster for certain. They are packed with delicious ingredients and so easy to make.
 

Butter, for greasing

3 eggs

4 rashers, chopped

1 small onion, finely chopped

2 tbsp cheddar cheese, grated

Salt and pepper, to taste

1 tsp cream

Dried parsley, pinch

1 sheet pre-made frozen puff pastry, thawed

Preheat the oven to 180°C / 350°F / Gas mark 4.

Lightly grease a 12 holder muffin tray with butter.

In a bowl, mix the eggs, bacon, onion, cheese, salt, pepper, cream and parsley with a fork until well combined.

Using cup or small glass, cut circles out of the thawed puff pastry and place into the greased muffin tray shapes.

Spoon the mixture into the pastry shapes.

Bake in the oven for 15 - 20 minutes or until golden brown.
