Beef wellington

An impressive dish for an elegant dinner with your friends or family.

700g beef fillet

300g mushrooms

2 shallots, finely chopped

1 garlic clove, crushed

1 tbsp olive oil

1 tbsp herbes de Provence

300g puff pastry

1 egg yolk, beaten

Season the beef filet on both sides. In a very hot pan with olive oil, cook the meat 5 minutes on each side to sear. Set aside and let cool completely.
In a pan over medium to high heat, cook the mushrooms with garlic, onions, herbs, salt and pepper. After 10 minutes, remove from the pan and chop very finely.
Preheat the oven to 250°C. Spread the puff pastry to get to 3mm thick. Spread the mushroom mixture on the pastry, place the meat in the middle and cover with mustard. Wrap the pastry around the meat. Brush with egg yolk, score and bake for 20 to 25 minutes. Serve with roasted potatoes and green beans.
