Blueberry quinoa muffins

For breakfast on the go or as a healthy snack, you will love these tasty muffins!

120g uncooked quinoa

150g whole wheat flour

50g dark brown sugar

1 tsp baking powder

1 tsp cinnamon

¼ tsp salt

2 bananas, ripe and mashed

75g honey

2 eggs

125ml coconut oil, melted

1 tsp vanilla extract

150g blueberries

Cook quinoa according to package directions. Let cool and set aside. 
Heat the oven to 180°C. Coat a muffin tray with non-stick spray and place muffins cases. 
Add all the wet ingredients to a largebowl and mix well. Add all the dry ingredients and mix until just combined. Finally, add the blueberries and cooked quinoa (about 2 cups), mix and divide in the muffin tray. 
Bake until an inserted skewer comes out clean, about 35 minutes. Let cool before removing from tin and serve.
