Chicken roulade and gratin dauphinois
A very tasty recipe for a family dinner.
4 chicken breasts
2 fresh mozzarella balls, sliced
4 slices Parma ham
1 tsp dried sage
1 tbsp butter
1 tbsp olive oil
Using a saucepan and cling foil, flatten the chicken. Season with salt, pepper and dried sage.
Top each chicken breast with a slice of ham, a couple of slices of mozzarella and roll tightly, holding with kitchen twine.
In a large pan, melt the butter and olive oil. Cook the chicken over medium heat, making sure to brown all sides of the meat, about 20 minutes.
Serve immediately.
