Courgetti carbonara

A tasty take on the Italian classic.

1 medium courgette per serving

4 rashers lean back bacon (or turkey rashers), chopped

1 large egg

150g low-fat soft cheese with garlic and herbs

150ml Avonmore Slimline Milk

40g reduced fat Parmesan or reduced fat mature cheese, finely grated

1 tsp vegetable oil

1 bunch spring onions, finely chopped

2 tbsp fresh parsley, finely chopped (optional)

Ground black pepper

Allow one medium courgette per person. Using a spiralizer, cut the courgette into strips.
Heat the oil in a large non-stick frying pan. Add the bacon and spring onions and cook them for about 5 minutes, stirring often. 
Beat together the soft cheese and egg in a mixing bowl, then add to the pan. Add the Avonmore Slimline Milk, half the cheese and the parsley (if using). Season with some pepper.
Heat gently for 2-3 minutes stirring constantly, until the mixture cooks and thickens. Add the courgetti, toss well with the sauce and cook for 1 to 2 minutes. Serve sprinkled with the remaining cheese.
