Dead easy macarons

These elegant treats will get a lot of attention at your next family reunion!

125g ground almond

200g icing sugar

3 large egg whites, at room temperature

30g cocoa powder

30g caster sugar

¼ tsp red food colouring

80g butter

120g chocolate

30g crème fraîche

Sieve together the icing sugar, ground almond and cocoa powder. 
Add a pinch of salt to the egg whites and whip until they form soft peaks, then gradually add the caster sugar. Add the red food colouring and whip until well combined.
Using a spatula, delicately fold the egg whites into the dry ingredients. Mix until the mixture is smooth and glossy.
Spoon the mixture into a piping bag and make small domes on a lined baking tray. Let the macarons sit for 30 minutes.
Heat the oven to 175°C and bake the macarons for 10 to 12 minutes. Let cool 10 minutes and remove from the tray. Let cool completely.
Meanwhile, melt the butter, crème fraîche and chocolate in a small saucepan. Let cool, spoon into a piping bag and fill half the macarons with the ganache. Top with another macaron and enjoy.
