A simple recipe to follow this weekend for the perfect chocolate chip cookie

Why not treat yourself this weekend with a bit of light baking? As we’re getting into the colder winter nights, there's really nothing better than cozying up on the couch with a freshly baked cookie and a lovely cup of tea. There are so many recipes out there that it can get a bit overwhelming sometimes, so we searched the web for the perfect yet easy cookie recipe for you to try this weekend.

Here's how to make the most classic and delicious cookie:

This recipe makes 10 cookies and only takes 20 minutes to pull together.    Baking time is short too - allow for 12 minutes baking time. 

Ingredients:

  • 120g butter, softened
  • 75g light brown sugar
  • 75g golden caster sugar
  • 1 medium egg
  • 1 tsp vanilla extract
  • 180g plain flour
  • ½ tsp bicarbonate of soda
  • 150g dark chocolate, cut into chunks
  • ¼ tsp salt

Method:

  • Preheat the oven to 180C/160C fan/gas 4.
  • Grease and line two baking sheets with parchment.
  • Cream the softened butter and both sugars together until very light and very fluffy.
  • Next beat in the egg and vanilla extract. 
  • Once combined, stir in the flour, bicarbonate of soda, dark chocolate chunks and salt.
  • Scoop 10 large tablespoons of the mixture onto the prepared trays, leaving enough space between each to allow for spreading.
  • Bake for 10-12 mins or until firm at the edges but still soft in the middle – they will harden a little as they cool.  Keep an eye on them not to over cook them.
  • Allow to cool on the baking tray for a few minutes and then transfer to a wire rack to cool completely.

These cookies will keep for three days in an airtight container (if they last that long!)
