It’s back to school time – and with it comes a million and one things for mums to get sorted: books, uniforms, cute pencil cases, and of course lunches.
Filling our little ones’ lunchboxes each day can be a bit of a chore. Not only do we have to employ a bit more creativity than we tired mums are capable of at this time of year, we’re also worried they’ll come back with our carefully planned lunches uneaten.
So to give you a little inspiration for back to school lunches, here are five favourite treats the kids will love:
1. ‘Cookie cutter’ sambos
Popping a cookie cutter over a sandwich might sound finicky, but trust us, it takes seconds – and as a bonus it will encourage the kids to gobble them up!
2. Peanut butter and jam ‘sushi’ rolls
PB&J is an old favourite, but this teeny tiny update will make the kids super excited for lunchtime. Simply remove the crusts from slices of brown bread and then flatten with a rolling pin, spread with the peanut butter and jam, roll and cut into even pieces – voila, sushi!
3. Lunchtime ‘pic n’ mix’
Kids will LOVE this idea. Simply get a bowl, and with the kids help fill with equal quantities of things like seeds, cereal, mini crackers and dried fruit. Store in an airtight box and every day pop a handful of the mixture into a small foodsaver for a lunchtime snack.
4. Tasty cracker packs
Kids love the novelty of little packs of mini crackers. They’re delicious, flavourful and taste a lot more ‘naughty’ than they really are. We love Carr’s Oddities, which are sold in packs of five – they’re baked not fried and come in cute animal and sea life shapes.
5. Healthy ‘Snickers’
Yes, it IS possible to have that delicious nutty, caramel taste without the fat and refined sugar. And creating it really couldn’t be easier. Simply cut a slit in each date, fill with peanut butter and roll in some peanuts. We swear it’s just like a Snickers, but with the added benefits of good fats and protein!
