What is it about children that they just always want to get involved - especially as you have just started the dinner?

 

Luckily, this recipe is perfect for little hands to help out.

 

It's also much more likely to encourage them to eat the fruits of their handiwork. We made these delicious tacos recently for a picnic lunch we were having and the kids LOVED preparing them at home first, tightly twisting the 100% chicken into its tortilla blanket. 

 

I love that the avocado gets neatly past their highly suspicious 'food analysis' and they will also love that lettuce crunch Wrap them up and throw them in the picnic basket for a delicious, easy and balanced meal on the go. 

 

Southern Fried chicken tacos 

Ingredients:

2 Birds Eye Southern Fried Chicken breasts

Corn tortillas

Shredded lettuce

Avocado, mashed

Red onion, finely chopped

Ready-made mild salsa

Coriander and lime on the side to serve

Instructions:

Cook the Birds Eye Southern Fried Chicken according to package directions. Warm a tortilla, then spread some mashed avocado, shredded lettuce and red onion. When the chicken is cooked, cut into strips and place on top. Drizzle some salsa and top with fresh coriander.
