It can be very easy to get stuck in a dinner rut. Before you know it, you find yourself cooking the same few meals on rotation each week, with barely any variation. Although it might be convenient, it can also become quite boring - and if your children start to complain, then the problem only gets worse.
Luckily, we’ve got the perfect recipe for you! This thai red chicken curry is delicious, easy to make and not too time-consuming. If you’re looking to spice up your dinnertime (pun intended), then give this recipe a try:
Serves: 4
Prep time: 20 minutes
Cook time: 25 minutes approx.
Ingredients:
4 chicken breasts
50g plain flour
4 tablespoons of oil
1 red pepper
1 red chilli pepper
1 red onion
2 cloves of garlic (crushed)
1 tablespoon of tomato puree
20g curry powder
400ml coconut milk
100ml chicken stock
50ml cream
Basmati rice
Method:
Cut up the red pepper, chilli, and onion. Crush the garlic, before setting the vegetables aside for later.
Cut the chicken breasts into small chunks. Toss each of the pieces into the flour, coating them evenly.
Heat up a frying pan before adding a dash of oil to it. Allow the oil to heat up for a minute, before adding the chicken. Turn the chicken pieces onto their sides after a few minutes, ensuring that they are fully cooked.
Add the curry powder and allow it to marinade the chicken for a few minutes.
Add the chopped pepper, chilli, onion and garlic into the pan, and allow them to soften before adding the coconut milk and chicken stock.
Allow everything to cook together on a low heat for approximately 8 minutes.
While your curry is simmering, boil the basmati rice.
Once your sauce has thickened up slightly, add the cream for an even richer consistency.
Serve, and enjoy!
Tips:
If you have leftover sauce, you can freeze it and use it another time. Or, you can reuse it for your next dinner!
