Let's be honest, your child is highly unlikely to eat a bowl of broccoli or a plate of green beans for dinner so this is a great way to get some really good food into them in the guise of 'fun-food'.
The bonus is that you will love it too. It is also quick, easy and perfect for a mid-week family dinner you can roll out time and time again.
Chicken fajita salad
Ingredients:
2 Birds Eye Original Chargrill Chicken
150g mixed salad leaves
½ red onion
½ red pepper
½ yellow pepper
½ bag fajita mix
1 avocado, sliced
A bunch of coriander
For the dressing:
1 tbsp lime juice
2 tbsp olive oil
Salt and pepper
Instructions:
Cook the Birds Eye Original Chargrill Chicken as per the guidance
Meanwhile, in a large pan, heat some olive oil and add the onions, peppers and fajita mix. Cook for 5 minutes and set aside.
Make the dressing: combine all ingredients and mix well.
In a large serving bowl, place mixed salad leaves at the bottom. Place the sauteed vegetables, avocado and cooked chicken on top. Drizzle with dressing and scatter with fresh chopped coriander.
You also have the option to serve it with a side of salsa and tortilla chips and feel free to add cucumbers or whatever veggies your kids are currently into.
This recipe serves 2 and shouldn't take more than half an hour to complete.
