Winter warmer recipes that the whole family will love

With the darker evenings well and truly upon us, it’s time to enjoy cosy evenings at home, with recipes that are hard to resist.

And with the arrival of this extreme cold snap – we’re even more inclined to want those warming old reliable recipes.

Creating a wholesome family meal that everyone can enjoy is a great comfort, and ensures the family are benefitting from a meal that is both scrumptious and healthy.

These are some of our favourites that you can try your hand at this winter, and keep in rotation over the coming months.

Roast Beef

This comforting roast beef is a hearty, warming dish for those winter months - perfect for the whole family!

Ingredients

  • 1 Knorr Zero Salt Beef Stock Cubes
  • 600 g beef sirloin steak (boneless and trimmed)
  • 300 g sweet potatoes
  • 200 g carrots
  • 150 g beetroot
  • 35 g red wine vinegar
  • 1 onion
  • 2 garlic clove (minced)
  • 1 tbsp thyme washed, finely chopped
  • 1 tbsp oregano washed, finely chopped
  • 1 lemon zest and juice
  • 6 tbsp olive oil

Method

  1. Preheat an oven to 175 degrees ° C.

  2. Pour the water into a saucepan and bring to a boil, add the Knorr Beef Zero Salt Stock Cube, stir until dissolved.

  3. Add the red wine vinegar, garlic, chopped herbs, black pepper, lemon zest and juice, then stir and remove from the heat.

  4. Place a roasting pan on medium-high heat and add the olive oil, fry the beef for 5 minutes ensuring all sides are coloured.

  5. Remove the beef from the tray and place it on a plate then add the vegetables and potatoes to the pan and fry for 2 minutes.

  6. Return the beef to the tray then pour the sauce over then place it into the oven. Bake for 1 hour.

  7. Remove the tray from the oven cover with foil and allow to rest for 10 minutes before carving.

 

Black Bean and Sweet Potato Shepherd's Pie

This is a really tasty recipe that is great for all the family

Ingredients

  • 1 Knorr Zero Salt Vegetable Stock Cubes
  • 800 g sweet potato cut into small chunks
  • 400 g lentils canned drained and rinsed
  • 400 g tomatoes chopped
  • 250 g mushrooms sliced
  • 1 red onion sliced
  • 200 g tinned black beans drained and rinsed
  • 70 g tomato puree
  • 2 garlic cloves mashed
  • 100 ml water
  • 1/2 tbsp smoked sweet paprika
  • 1 tbsp cumin
  • 1 tbsp oil

Method

  1. Preheat the oven to 175 degrees C.

  2. Boil the sweet potatoes until tender (about 25-30 minutes), drain and mash until smooth. Season to taste and set aside.

  3. Drizzle the oil in a pot and fry the onions and mushrooms on a medium high heat until it starts to colour.

  4. Add the garlic, smoked paprika and cumin powder then heat it through for about a minute.

  5. Add the lentils, black beans, tomato purée, chopped tomatoes, water and Knorr Zero Salt Veggie Stock Cubes, mixing everything together. Let it simmer for about 5 minutes.

  6. Spoon the bean mix into an ovenproof dish and top off with the sweet potato mash, scoring the mash with a fork.

  7. Place in the oven for 30-35 minutes or until it starts to crisp and turn golden brown.

 

Lentil Dhal Masala with Tomato and Spinach

A quick and easy meal that’s tasty and nutritious

Ingredients

  • 1 Knorr Zero Salt Vegetable Stock Cubes
  • 325 g red lentils
  • 800 g tomatoes cubed
  • 400 g spinach washed and roughly chopped
  • 1 onion finely chopped
  • 1 chilli finely chopped (optional)
  • 3 garlic mashed
  • 1 tbsp ginger grated
  • 1 L water
  • 2 tsp garam masala
  • 1 tsp turmeric

          Serve With

  • 4 naan bread
  • 125 ml Greek yoghurt (or plant-based alternative to make this dish vegan friendly)

Method

  1. Wash the lentils, strain, add to a pot and pour in the water with the Knorr Zero Salt Veggie Stock Cube. Bring to the boil, turn down the heat to a simmer and gently boil the lentils until cooked for about 15-20 minutes, set aside.

  2. Drizzle the oil in another pot on a medium heat, gently fry the cumin seeds, for around a minute, so it releases its flavours. Add the onion, garlic, ginger and chilli (if using) then fry for a couple of minutes or until the onion becomes translucent.

  3. Add the garam masala, turmeric, tomatoes and the cooked lentils to the pot and let it gently simmer for about 10 minutes. Stir through the spinach until it starts to wilt and season to taste.

  4. Serve with naan bread and a dollop of Greek yoghurt or plant-based alternative.
