St. Patrick’s Day always makes for a fun family day out, and eating lots of goodies is definitely a must. So before you’ve thrown on your leprechaun hat and headed out to the parade, why not get cooking with the Dr. Oetker baking range? These recipes from Dr. Oetker make for the perfect treats for kids (and grown ups too) and are a fun way to celebrate Paddy’s Day.
 
 
Mint Whoopies
Ingredients
120g butter
190g sugar
2 eggs
270g flour
5 tbsp cocoa powder
1 tsp. Dr.Oetker baking powder
1/2 tsp salt
1 tsp. Dr.Oetker vanilla extract
250ml buttermilk
For the filling
250g Icing sugar
170g butter
2 egg whites
1 tsp Dr.Oetker Peppermint flavouring
1 tsp Dr.Oetker green food coloring
 
Method
  • Preheat the oven to 180c.
  • In one bowl combine all the dry ingredients.
  • In another bowl beat the butter and sugar together until pale and fluffy. Then beat in the egg.
  • Now add the dry ingredients and the buttermilk alternatively and slowly until all are combined into a thick batter.
  • Using two teaspoons shape into rounded drops and space on baking sheets allow for spreading and bake for 15 minutes.
  • Meanwhile make the filling by whisking all the ingredients together until a light paste is formed.
  • When the rounded drops have cooled sandwich together with filling and serve.
 
Irish flag biscuits
Ingredients
175g soft unsalted butter
200g caster sugar
2 large eggs
400g plain flour
1 tsp Dr.Oetker baking powder
1 tsp salt
300g icing sugar
Dr.Oetker Food colourings
 
Method
  • Preheat the oven to 180c.
  • Cream the butter and sugar together until pale and then gradually beat in the eggs and the vanilla.
  • In another bowl combine the dry ingredients and add to the beaten egg mixture to create a soft dough. Leave to rest for 1 hour.
  • Cut into rectangles and bake on lined trays for 8-12 minute.
  • When cooled, mix icing sugar with a few tbsp of warm water and colourings to create the Irish flag.
 
White chocolate Shamrock brownie lollipops
Ingredients
250g Dr.Oetker Milk chocolate
165g butter
3 tsp Dr.Oetker vanilla extract
300g sugar
135g flour
3 eggs
200g Dr.Oetker white chocolate for coating
Dr. Oetker green icing
lollipop sticks
 
Method
  • Preheat the oven to 180c.
  • Melt the chocolate and butter in a bowl.
  • Beat the sugar and eggs until light and fluffy then add the vanilla slowly.
  • Add the chocolate to the beaten eggs and add in the flour. Mix to combine.
  • Pour batter into a greased swiss roll tin and bake for 25-30 minutes.
  • Once cooled on a wire rack, cut into shamrock shapes, insert a lollipop stick and coat in melted white chocolate.
  • Leave to set on greaseproof paper and decorate with Dr. Oetker green icing.
