It’s the go-to lunch option for ourselves and our little ones, and sometimes it seems that us Irish have a bit of a love affair going on with the humble sandwich.

 

It is this love for sandwiches – and the major guilt that so many of us feel by indulging in them – that provided the inspiration for Flora Light’s latest venture.

 

Having learned that 50% of Ireland’s mums feel guilty for indulging in a sandwich, and 73% would prefer their sandwiches to be low in calories, Flora Light has teamed up with TV presenter Lucy Kennedy to curate a range of five sandwiches to answer our prayers.

 

As a busy working mum-of-two, our Mummy Blogger Lucy is all-too familiar with the challenge to create new and exciting lunchtime options for the family, and she has ensured that everything from the family picnic to the ‘quick-fix’ are covered in these five delicious recipes.

 

 

With Flora Light’s recent survey revealing that many mums are spending up to €5,200 annually on shop-bought sandwiches, these mouth-watering ideas will not only save time but they will also save money.

 

Commenting on her new collaboration, Lucy said:I’ve a pretty hectic lifestyle; I’m usually chauffeuring the kids to school, football and swimming, then I’m in studio for a few hours a day. We have a canteen in work which gets very same-y, so I love taking five minutes out of the madness to knock together a tasty sambo for myself and the kids. Nothing brings a smile to a face like a delicious sandwich!”

The 'Lazy Sunday'

Lucy: "This one is for when you’ve been out the night before - great cure with a cup of tea!"

  • Use fresh, white bread
  • Spread some Flora Light
  • Add 2 slices of thickly-cut ham
  • Sprinkle on some white, cheddar cheese
  • Add a dollop of coleslaw

 

The 'Can't Go Wrong'

Lucy: "This is a 'go-to' sandwich when I'm in a rush, because all of the ingredients are usually in my fridge!"

  • Use fresh white bread
  • Spread on some Flora Light
  • Spread on a bit of mayo (optional)
  • Add two slices of smokey bacon
  • Sprinkle on some iceberg lettuce
  • Add sliced tomatoes.

 

The 'Light & Tasty'

Lucy: "A nice choice if you’ve over-indulged!"

  • Use multi-grain brown bread
  • Spread some Flora Light
  • A spread of light mayo
  • Add some tuna that’s been mixed with sweetcorn
  • Sprinkle on some red onion
