If you have fussy eaters (I do) you’ll know that making mealtimes fun is a great way to garner some interest in the food being served. And as back to school time approaches, combining learning and food can work really well for curious minds. So why not try this easy way to do just that:
 
 
Take out a wall map or a globe if you have one, or open Google Maps on your phone or tablet, and ask your children to find a particular country – for example, Mexico. Then ask your children questions – what language do people speak in Mexico, what do children learn at school there, and what traditions do they have that differ from ours?
 
 
Trying to guess the answers is a great way to get children thinking, and then together you can look up the information to see if they were right.
 
 
Children particularly enjoy finding out about food in other countries – what do people eat that’s similar to our food, and are there some dishes we’ve never heard of? Help them explore native ingredients, typical meals, and food-related customs, and look up images to add colour to the research.
 
 
Then to end the “lesson”, let them know they get to try some Mexican food, and serve up these simple, delicious Southern Fried Chicken Tacos. It’s a great way to get chicken, lettuce and avocado into them, while teaching them something new and fun at the same time.
 
 
Southern Fried Chicken Tacos
 
Ingredients:
  • 2 Birds Eye Southern Fried Chicken breasts
  • Corn tortillas
  • Shredded lettuce
  • Avocado, mashed
  • Red onion, finely chopped
  • Ready-made mild salsa
  • Coriander and lime on the side to serve
 
Method:
  1. Cook the Birds Eye Southern Fried Chicken according to package directions.
  2. Warm a tortilla, then spread some mashed avocado, shredded lettuce, and red onion.
  3. When the chicken is cooked, cut into strips and place on top. Drizzle some salsa and top with fresh coriander.
  4. Hold with a toothpick to serve – enjoy!
