Friday is dinner 'treat night' in our house.
That usually involves some kind of takeaway en famille - it also usually means we have an argument over what cuisine we choose.
Then I get a guilt trip about feeding my children something that may not be as healthy as my usual home-cooked meal. By the time the meal arrives, there is usually a mistake with the order, and one of the children will start sulking.
As soon as this error is rectified, our meals are not as hot as they should be, and everyone is becoming very hangry (a hybrid emotion of hungry and angry). Each week I vow that next week things will be different.
That's why I love this particular recipe; It is a great way of faking takeaway night.
Check out this fakeaway chicken spice bag you can make in the comfort of your own home. No leaky takeaway bags to deal with, AND it is super easy to make!
What you need:
12 Birds Eye Chicken Dippers
6 medium potatoes, washed and cut into wedges
1 sliced onion
1 red pepper, cut into strips
1 green pepper, cut into strips
Olive oil
For the spice mix
1 tbsp sea salt
1 tsp Chinese five spice
½ tsp garlic powder
½ tsp chilli powder
1 tsp pepper
Optional: red and green fresh chilli, finely sliced
What you do:
Cook the Birds Eye Chicken Dippers according to package directions. Make the spice mix by adding Chinese five spice, chilli, garlic, pepper together, add some salt and stir.
Make the chips: Heat the oven to 180°C. Coat the potato wedges with olive oil and season with half of the spice mix. Transfer onto a lined baking sheet and bake for 35 to 40 minutes. In a large wok, heat some oil, then add the peppers and onion and one teaspoon of spice mix. Sauté for around 5 to 10 minutes.
Combine the cooked Chicken Dippers, wedges and veggies and sprinkle with some more seasoning. Serve immediately and expect empty plates in mere moments!
Not only is this recipe more healthy, it is also usually cheaper than getting that takeaway! Why not try it this weekend?
