 McVitie’s Lunchtime Salt & Cracked Black Pepper Flatbreads:
Salami and Strawberry Crostini
Serves 8 as a canapé
Ingredients:
2 boxes of McVitie's Lunchtime Salt and Cracked Black Pepper Flatbreads
200g mozzarella cheese (the firm variety you grate for pizza)
200g salami, about 20 to 24 slices
12-14 fresh strawberries, hulled and halved
Balsamic vinegar reduction
Black pepper
 
Method:
Thinly slice the mozzarella and place 1 slice on top of each McVitie’s Lunchtime Flatbread. 
Fold over a slice of salami and pin in place with strawberry halves.
Drizzle over balsamic vinegar reduction and season with freshly ground black pepper.
Serve as a canapé with drinks or as a starter
 
Layered Kilner Jar Dip
Makes 1 X 500ml jar
Ingredients:
2 boxes of McVitie's Lunchtime Salt and Cracked Black Pepper Flatbreads
1 small jar of basil pesto
1 small jar of sundried tomato pesto
2 x 250g tubs of cream cheese or cottage cheese
4tbls pine nuts, lightly toasted
2tbls chopped fresh chives
1 large Kilner jar
 
Method:
If you are using cream cheese, loosed it up with 2 to 3 tablespoons of milk. Mix in the chives.
Spoon half the jar of pesto into the Kilner jar.
Carefully, spoon a quarter of the cream cheese on top.
Spoon in half the jar of sundried tomato pesto.
Spoon another layer of cream cheese over.
Continue alternating layers until you finish with a layer of cream cheese. Sprinkle over the toasted pine nuts.
Serve with McVitie's Lunchtime Flatbreads and antipasti.
 
McVitie’s Lunchtime Mixed Seed Flatbreads:
 
Orange and Chilli Guacamole
Makes 1 Bowl
Ingredients:
2 ripe avocados
1 small red chilli, seeded and finely chopped
Juice and zest of 1 orange
4tbls chopped fresh coriander
Salt and pepper
1 box McVitie's Lunchtime Mixed Seed Flatbreads
 
Method:
Mash the avocados and add the chilli, orange juice, zest and fresh coriander.
Season well with salt and pepper and garnish with a little chilli and orange zest.
Serve immediately with the McVitie’s Lunchtime Flatbreads as a light lunch, snack or party dip
 
Sweet Potato and Tomato Soup
Serves 4
Ingredients:
2tbls olive oil
1 onion, diced
4 sweet potatoes, peeled and cubed
1 tin chopped tomatoes
1litre vegetable stock
50g tomato paste
1tsp lemon juice
1tsp cinnamon
1 box of McVitie's Lunchtime Mixed Seed Flatbreads
 
Method:
Heat the olive in a large pot and gently fry the onion until soft.
Add the cinnamon and sweet potato and stir well to coat the sweet potato.
Add the stock, chopped tomatoes and tomato paste. Bring to the boil, then reduce heat and simmer, covered for 20 minutes.
Add the lemon juice.
Blitz with a handheld blender until smooth. Season to taste.
Serve hot with McVitie's Lunchtime Flatbreads.
