Jacket potato with sour cream
Jacket potatoes are a perfect and filling after school treat. They are also extremely versatile so experiment with various fillings.
 

2 large potatoes, washed

60g sour cream

2 onions, thinly sliced

55g cheddar cheese, grated

Salt and pepper to taste

Pierce each potato several times with fork. Place in the microwave and cook on high for 10 minutes.  

Once cooled down, cut the top off the potato and scoop out the inside.

In a large bowl, combine the potato mash with the sour cream, onion and cheese. Season with salt and pepper.

Spoon back into the potato skin and cook in the microwave on high for 2 minutes.
