Lemon and Lime Drizzle Slice

Sponge

250g butter or baking spread at room temperature, plus extra for greasing

250g caster sugar

275g self-raising flour, sieved

2 level tsp baking powder

4 large eggs

6 tbsp lime juice

Zest of 2 limes, finely grated

Lemon Curd

4 large egg yolks

100g caster sugar

2 large lemons, juice and zest

100g unsalted butter

Lime Drizzle

100g icing sugar, sieved

1 lime, zest and juice

Preheat oven to 180ºC (160ºC fan) and line a 9x13-inch traybake tin (30x23cm) with parchment paper.

Place all the sponge ingredients into a bowl and mix until smooth.

Spread the mixture into the prepared tin and bake for 35-40 minutes or until a skewer inserted into the centre comes out clean then allow to cool.

Next, make the Lemon Curd. In a microwave-safe bowl, mix the lemon juice, lemon zest, caster sugar, and egg yolks. Microwave on 50% power for 3 minutes, then whisk. Repeat the 3-

Cut the unsalted butter into cubes, add to the lemon curd, and whisk until melted. Leave to cool completely, then spread over the sponge. 

Mix the icing sugar with enough lime juice to achieve a pouring consistency drizzle over the set lemon curd and sprinkle with lime zest. Allow to set and cut into fingers.
