Irish flag biscuits

Irish flag biscuits
These biscuits are ideal for snacking on after the St. Patrick's Day parade. Of course you can change  the colour of the icing on top and have them any day of the year!

175g soft unsalted butter
200g caster sugar
2 large eggs
400g plain flour
1 tsp baking powder
1 tsp salt
300g icing sugar
Food colourings

Preheat the oven to 180°C/350°F/Gas 4.

Cream the butter and sugar together until pale and then gradually beat in the eggs and the vanilla.

In another bowl combine the dry ingredients and add to the beaten egg mixture to create a soft dough. Leave to rest for 1 hour.

Cut into rectangles and bake on lined trays for 8-12 minute.

When cooled, mix icing sugar with a few tbsp of warm water and colourings to create the Irish flag.

Perhaps make the dough on the morning of St. Patrick's Day and then leave the dough to rest while the family heads to the parade. Then simply pop them into the oven for a few minutes when you're home!
