Meatloaf muffins

Kids will have no problem eating their dinner when it looks like dessert!
500g beef mince
1 egg
50g cheddar cheese, grated
30g breadcrumbs
1/2 tsp salt
1/2 tsp pepper
Mash potato, to top.
Cherry tomatoes, halved, to top.
Ketchup, to decorate.
Preheat oven to 200°C, 180°C if fan assisted.
In a bowl combine the beef mince, egg, salt, pepper, cheese and breadcrumbs.
Shape an oiled muffin tin.
Bake in the oven for 45-50 mins until cooked throughly.
When cooked, shape the mash potato on top of each meatloaf as if it was a real muffin and top with a half cherry tomato and decorate with ketchup.
