1 tsp olive oil
6 mushrooms
600g lean beef mince
1 courgette, grated
1 carrot, grated
450g cooked long grain rice
3 tbsp light soy sauce
3 tbsp oyster
Heat a large non-stick frypan or a wok over high heat.
Add onions and mince and cook for 5 minutes or until meat is browned.
Stir in the grated zucchini, mushrooms and carrots and cook for a further 2 minutes.
Pour in the soy, oyster sauce and rice and heat through.
