Rosemary roast pork with vegetables and potatoes
Lovely pork loin roast which all the family will enjoy.

3 cloves garlic, diced

3 sprigs of fresh rosemary

Salt and pepper

1kg boneless pork loin roast

5 tbsp olive oil

750g rooster potatoes

2 carrots, chopped

2 parsnips, chopped

Preheat oven to 180°C/350°F/Gas 4.

Mix garlic with salt, pepper and 4 tbsp olive oil.

Rub the meat with the garlic mixture and olive oil and scatter with sprigs of rosemary.

Place the pork onto a roasting tray and transfer to preheated oven for 1 hour.

In the meanwhile, add the potatoes to a large saucepan, cover with water and bring to the boil.

Turn down the heat and simmer for 10 minutes, then remove from the heat and drain.

Remove the roast from the oven after an hour, add the chopped carrots and parsnips to the pan mixing with the cooking juices and 1 tbsp olive oil

After 2 hours remove roast to a platter and serve with some of the cooking juices.
