Sausages with root mash

A simple dish to prepare and enjoy.
6 sausages
3 parsnips, peeled and roughly chopped
4 medium potatoes, peeled and roughly chopped
175g Brussels sprouts
4 tbsp milk
1 tbsp wholegrain mustard
Heat the grill to medium-high and grill the sausages for 10-15 minutes, turning frequently.
Cook the parsnips and potatoes in boiling salted water for about 10 minutes.
Shred the sprouts either in a food processor or by hand then add to the pan for the last 2-3 minutes and cook until all the vegetables are tender.
Drain and using a food processor add the vegetables and blitz until smooth then beat in the milk and mustard with salt and pepper.
Serve with the sausages.
