Antipasti crostini
A sophisticated starter that takes minutes to make and serve.

Juice ½ lemon

2 small garlic cloves, 1 crushed, 1 cut in half

1 ½ tbsp olive oil

Parmesan, grated

150g artichoke hearts, drained and roughly chopped

2 roasted red peppers, drained and roughly chopped

½ red onion, sliced

1 tbsp, capers

1 small baguette, thinly sliced

1 small mozzarella cheese, drained and sliced thinly

Parmesan shavings, to serve

In a bowl, squeeze some lemon add the crushed garlic clove, olive oil, the Parmesan, a pinch of salt and plenty of black pepper and whisk to combine.

Add the artichoke hearts and peppers, onion and capers into the bowl, mix and aside.

Grill 6 slices of the baguette on each side until golden, rub lightly with the halved garlic clove and brush with the rest of the olive oil.

Add the sliced mozzarella then spread generously with artichoke and pepper mix. 

Scatter over Parmesan shavings, grind over some black pepper and serve.
