Beef stroganoff with rice

Beef stroganoff is a quick and easy recipe that will fill the whole family in minutes.
400g rice
2 tbsp olive oil
1 onion, sliced
1 clove garlic, minced
400g beef, cubed
6 button mushrooms, sliced
300ml beef stock
1 tbsp plain flour
1 tbsp mustard
1 tbsp tomato purée
Handful flat-leaf parsley, chopped
Cook the rice according to packet instructions.
Heat the oil in a large frying pan on a high temperature.
Cook your onions and garlic on a medium temperature for about 3 minutes.
Add your beef and cook for a further 10 minutes before throwing in your mushrooms.
Pour in the stock and add the flour. Allow to bubble before stirring in your mustard and tomato purée. Leave for 5 minutes.
Serve on top of your rice and garnish with the parsley.
