Butter cake

Butter cake
This recipe makes a great thick cake base for any occasion. Decorate it to your own taste or serve with a dusting of icing sugar for afternoon tea. 
 

250g butter, softened

200g caster sugar

2 tsp vanilla extract

3 eggs

190g self-raising flour, sifted

180ml milk

Preheat oven to 180°C or gas mark 5. Line a 9 inch cake tin with baking paper.

Combine the butter, sugar and vanilla together until it forms a pale fluffy mixture. You can use a food processor for this part.

Whisk in the eggs one at a time until completely combined. Fold in the flour and the milk.

Spoon the mixture into your cake tin. Smooth down the top.

Place in the oven for an hour or until a golden colour.  To check if it is fully cooked, place a knife into the middle and if it comes out cleans the cake is done. Leave to cool before turning it out onto a wire rack.
